ABOUT CHEF G
Chef Guillermo's culinary odyssey, deeply rooted in his Puerto Rican and Spanish heritage, was sparked by a fervent passion for cooking. Guillermo's journey began outside the kitchen; in the field of archaeology, where his studies and explorations into Mayan culture in Belize and Mexico unexpectedly kindled a deep love for cooking. Leaving Academia for the heat of the kitchen led him to Miami's Yuca restaurant under Chef Douglas Rodriguez. Years later his path crossed with Chelsea's in the  Philadelphia catering scene in 2017, where their shared passion for culinary innovation and memorable dining experiences forged a strong partnership. Chelsea's recognition of Guillermo's talent and vision led to his joining the Olive & Shae team in 2021. Guillermo's distinguished career, marked by accolades in Miami, a transformative role at Philadelphia's Cuba Libre restaurant, and the honor of cooking at the James Beard House, reflects his continuous pursuit of culinary excellence and the creation of unique food moments at Olive & Shae.
